    Chef Long Nguyen has worked in professional kitchens for years, so he knows why restaurant food tastes so good.  He says he's cooked mashed potatoes and there's almost equal parts butter to potatoes.  He wasn't surprised that a stody by the Rand Corp. says 96% of main entrees at top eateries exceed the faily fat, calorie and sodium limits set by the USDA.
