  1. The perfect burger

    Los Angeles Times Staff Writer
A word of advice. Never use the phrase "just a burger" with Nancy Silverton. I did and was promptly challenged on every aspect of burger-making, starting with where to buy the meat, what grind, size of patty, how to cook it, what to serve with it, what...

  7. In a pickle about salt

Q: I have a recipe for pickles that calls for 1 cup coarse salt for 6-8 quart jars of pickles. If I reduce the salt to 1/2 cup, will it affect how the pickles turn out? What if I reduce it to 1/4 cup of salt? There are enough other flavors in the recipe (hot peppers, dill and garlic) to make up for the lack of salt flavoring, I believe. I guess my question is, if I reduce the salt significantly will the cucumbers still turn into pickles?

  15. Review: L.A. Opera's 'Flying Dutchman' back in action

Conditions on the ground weren't ideal, and "The Flying Dutchman" did not achieve liftoff when Los Angeles Opera opened its gloomy new production of Wagner's gloomy early opera the second Saturday of March at the Dorothy Chandler Pavilion.

  17. Holy Food!: Kosher and Its Imitators in Connecticut

What exactly is kosher? The short answer is a religious certification given to any cooked or processed food that an observant Jew is permitted to eat. A satisfying answer in detail is not easy, so a visual aid may help: picture three identical matzo balls, each floating in its own bowl of soup: one at Shuman's in Bloomfield, the second at Gold's in Westport, and the third at Michael's in Middletown. The first is kosher, the second is "kosher-style", and the third is just an unaffiliated bowl of matzo ball soup. In addition to these three states of existence, the matzo ball itself straddles yet another stratum of culinary holiness: kosher-for-Passover knoshing.

  23. 34 pickle jars of pennies for your thoughts?

Like many Americans, I keep a wary eye on Canada, just as a teenage girl keeps her eye on a talented younger sister. Sure, we’ve been in the lead for a long time now, but Canadians keep narrowing the gap.
