  3. Former 'Top Chef' star has revived his dream

A plan was hatched. The moment his name was announced, they'd jump-tackle him onstage, ruffle his Mohawk on live television. That's how sure the other contestants were that Dale Levitski would win "Top Chef." Levitski would accept the $100,000 -- money that would help launch his downtown Chicago restaurant, his dream restaurant, an upscale diner called Town & Country.

  5. Making Chicago's top chef

Grant Achatz moved up the aisle of the plane, his carry-on draped over his gaunt frame. It was October at Reagan National Airport, a rare moment of calm for Chicago's top chef, whose wary eyes belong to a man older than 36, and whose life has been blessed and cursed with incident. He was traveling with his two young sons, and they had just visited with the parents of his girlfriend, food journalist Heather Sperling. They were headed home to Chicago, trudging through the cabin of the plane toward coach, when his younger son, Keller, swung his backpack into a well-dressed man in first class.

  7. Ria chef gets it right

Taste, as a jazz musician once noted, is manifested in the notes one declines to play. In that regard, Danny Grant is a taste master.

  11. Book reviews: 'Life, on the Line' by Grant Achatz; 'Blood, Bones & Butter' by Gabrielle Hamilton

A good restaurant runs on hunger — not just that of its customers, but also of its owners, who put in 18-hour days obsessing that every single detail must be as perfect as possible. But although the hunger of the diners is pretty simple to figure out, that which drives the owners is remarkably diverse.

  13. Table Talk: Gearing up for grilled cheese

It's finally spring, and our thoughts turn naturally to warm, crusty bread and gooey, molten melted cheese. I'm firmly in the simpler-is-better camp when it comes to grilled cheese. A perfect grilled cheese is one of those things you're still as likely to find at a lunch counter, or an all-night diner, as at a gourmet place. Personally, I could do without tomatoes, but I'm always happy to see good, slabby bacon.

  23. Two Michelin-star chef Jason McLeod, formerly of Ria, surfaces in San Diego

The timing was strange. After chef Jason McLeod won two Michelin stars at Ria last November, shocking the Chicago dining scene but mostly himself, McLeod unexpectedly left the restaurant three months later. The Elysian Hotel’s press release noted his departure with a curiously-brief acknowledgment: “McLeod has decided to pursue other opportunities and is no longer with the Elysian’s culinary team.” He disappeared from public view, and attempts to contact McLeod proved unsuccessful. Conspiracy theorists had a field day.
