  1. Restaurant review: Mariams adds to Valley's culinary diversity

Mariams Restaurant in Allentown expands the Lehigh Valley’s culinary diversity. The ethnic eatery, which opened in February, serves up exotic-sounding Ethiopian fare such as “doro wot” (chicken stew) that might just be described as African comfort food.

  9. Chicken thighs give flavor a leg up

For lean, speedy, economical dinners we cook chicken at least once a week. You probably do too. Gets boring, doesn't it? I think I have a solution: Step away from the chicken breasts once in a while. Instead, try chicken thighs. The moistest cut of...

  11. Long for a french fry fix?

Almost all of us have wandered past a fast food restaurant or hot dog stand and felt an overwhelming desire for an order of fries. That smell of potatoes and oil can get to anyone once in a while. No fried foods, we may tell ourselves, followed by self-messages on the evils of high-cal, high-salt options.

  21. In a pickle about salt

Q: I have a recipe for pickles that calls for 1 cup coarse salt for 6-8 quart jars of pickles. If I reduce the salt to 1/2 cup, will it affect how the pickles turn out? What if I reduce it to 1/4 cup of salt? There are enough other flavors in the recipe (hot peppers, dill and garlic) to make up for the lack of salt flavoring, I believe. I guess my question is, if I reduce the salt significantly will the cucumbers still turn into pickles?
