  1. The top hot dog-consuming cities

    Dining@Large
In honor of Labor Day, I guess, Ball Park Franks sent me a list of the Top 10 Hot Dog-Consuming Cities. A weaker person than I would save it for next Tuesday, but I'm better than that. I'm going to......

  3. Is American food getting spicier?

    Dining@Large
I got a press release recently from Johnny Rockets about its new Houston burger, described as "a spicy twist" on its regular burger, with mayonnaise, Hot Rocket Fuel sauce (whatever that is, but, let me guess, it's not the mild......

  5. Unexpected restaurants for Valentine's Day

    Dining@Large
I've been putting it off, but really the time has come to settle on a Valentine's Day Top 10 topic. After all, eating out is a Valentine's tradition these days. (I don't think it used to be.) And if I'm going......

  7. Cures for the "Irish flu"

    Dining@Large
If you overdid it last night celebrating St. Patrick's Day, I'm not sure you'll feel like cooking a big breakfast of spicy sirloin sliders and breakfast burritos. But the folks at Tabasco and chef Laurent Tourondel of New York's BLT Market......

  9. Soup with a Mexican kick and cheesy goodness

This is a wonderfully easy recipe to prepare. And better yet, it’s a soup that’s loaded with flavor. If you are concerned about the waistline, then substitute the half and half or heavy cream with 1-percent milk. Make sure you gradually add in...

  11. In a pickle about salt

Q: I have a recipe for pickles that calls for 1 cup coarse salt for 6-8 quart jars of pickles. If I reduce the salt to 1/2 cup, will it affect how the pickles turn out? What if I reduce it to 1/4 cup of salt? There are enough other flavors in the recipe (hot peppers, dill and garlic) to make up for the lack of salt flavoring, I believe. I guess my question is, if I reduce the salt significantly will the cucumbers still turn into pickles?

  13. A quick dish with a kick

This recipe is perfect for those times when you need a delicious dinner that doesn’t require hours of preparation or cooking.  It’s low in fat and calories and high in flavor, because I’ve substituted skim milk and cornstarch for heavy...

  15. Florida fall has subtle edge over North's autumn

Autumn has come to Central Florida. Windows sealed shut for months are finally open to the breeze. It's extra-blankets-at-night, long-sleeve-shirts-during-daytime weather. After a long, hot summer, there's a welcome crispness to the air.

  17. Showcasing innovation on Nov. 30

If you trail any farmer or rancher around his or her operation, you’ll find “innovation” follows them. What does innovation mean? Really, it’s a fancy word that means things are changed to make something work better. Who doesn&...

  19. Finished with a twist

The culinary scholar recognizes five sauces: bechamel, veloute, espagnole, tomato and hollandaise. No more. All sauce, he insists, flows from one of these "mother sauces." A charmingly compact, if incomplete, worldview, ignoring, as it does, the chutneys and pestos and salsas of the world.

  23. Mexican soup is one way to eat your veggies

This is a classic vegetarian dish that I made simple by incorporating a variety of canned beans and making it a cook all together dish in one pot over low heat. This dish would work well in a slow cooker, too. It's for a vegetarian friend who works at a...
