    Like any proud Peruvian (well, halvsies), I can't get through a conversation about the country without waxing nostalgic about my favorite foods: conchitas a la parmesana (scallops baked in Parmesan cheese), lenguado con mantequilla negra y alcaparras (sole sauteed in black butter with capers), ceviche de pescado (chunks of fresh fish &quot;cooked" in the acid of key limes) &mdash; all eaten, preferably, beach-side while getting drowsy on pisco sours.
