    DARIO CECCHINI is in the beef aging room at Harvey Gussman's tiny mid-Wilshire butcher shop. With a connoisseur's eye he inspects the stacks of short loins suspended from the ceiling, carefully examining the color, stroking the surfaces, sniffing. Then a photographer starts taking pictures. Cecchini flashes a maniacal grin, grabs a loin and cradles it like a baby. Then he plants a big kiss on it. If one can be said to ham it up with a piece of beef, Cecchini is doing it. You don't become the most famous butcher in the world by being shy.

Do this with the effervescence of a Prosecco-based drink called the Mr. C Cocktail, which is served at the tony Mr. C Beverly Hills hotel on Beverwil Drive at Pico Boulevard. Opened by brothers Ignazio and Maggio Cipriani, the Mr. C Beverly Hills is the perfect place to imbibe in a refreshing cocktail. The Cipriani bothers' great-grandfather, Giuseppe, opened Harry's Bar in Venice in 1931. If the Cipriani family created the Bellini, they can invent anything. The Mr. C cocktail does its namesakes proud with a refreshing blend of light-and-bright vodka, Prosecco, sweet mandarin pur&eacute;e and a swallow of tart lemon juice.

    Crimini mushrooms, which are also called Roman, brown or Italian mushrooms, used to be the only mushroom grown in the United States. Growers abandoned them in favor of a faster-growing cousin, the common white button mushroom. However, an increase in consumer interest in mushrooms has given the cream-colored crimini another chance. The caps are cocoa-colored and have chocolate-brown gills. The texture is firmer and the flavor is much more intense and satisfying. Select plump, solid mushrooms with no sign of dampness or shriveling. Check the stems for any signs of mold. Store, refrigerated, in a basket covered with a towel for up to a week. Use raw or in any recipe calling for domestic or button mushrooms.
