1. Lighting the way

Grilling books are getting a bit much these days, aren't they? Either you're commanded to build a veritable pyre to sear your steak, preferably on a Patagonian plain, or you must search out a whole hog whose bloodlines are bluer than yours, or you have to rassle almost to the death all those barbecue purists trying to slap that jarred sauce out of your hands.

  3. Bigmista's Barbecue: Fire it up!

The Torrance farmers market is in full bloom: pluots mottled with patches of red and green, bottles of fresh-pressed pomegranate juice, eggplants as thick as tree trunks. Weekenders huddle under canopies clutching pupusas and plates of pad Thai, the electric hum of a blues man's guitar and the distant patter of steel drums colliding in the air above. The market's meat seekers, however, are unfazed by the clamor, eyes affixed to the brisket being carved at Bigmista's Barbecue.

  5. What to drink with a chicken in Oaxacan yellow mole? Something that takes the edge off

Recently, I was invited to a friend’s house in Patzcuaro (Michoacan), <span class="runtimeTopic">Mexico, and we spent the week madly cooking. The market there was so fantastic -- fat yellow chickens, fresh chayote, baby jicama, a rainbow of fresh and dried chiles, heaps of garlic and herbs. Indian women sat with produce from their gardens on blankets in front of them. They always had the freshest ingredients, including hand-patted corn tortillas, and when things were slow, they’d trim the thorns from nopales (cactus paddles).

  13. Patricia Wells' 'Food Lover's Guide to Paris' is now an app: Search bistros, cheese shops, more

Essential for anybody heading to Paris this summer: Patricia Wells' new app, "Food Lover's Guide to Paris." If the name rings a bell, it’s because the book of the same title, which first came out in 1984 and then was revised a couple of times over, was everybody’s Paris bible in a world before search engines, blogs and 24/7 tweeting.

  17. What to drink with Bludso's smoked beef brisket?

Now that <a href="http://barandque.com">Bludso’s Bar & Que has opened in the former Tar Pit space on La Brea Avenue, I can indulge in Kevin Bludso’s Texas-style smoked beef brisket more than once in a blue moon. His original locale is in Compton, but the new location, opened in collaboration with Jason Bernstein and James Starr, the owners of the Golden State on Fairfax, is miles closer. It also has an ample, even huge, sit-down area — and a full bar, which is sweet.
