    Grant Achatz moved up the aisle of the plane, his carry-on draped over his gaunt frame. It was October at Reagan National Airport, a rare moment of calm for Chicago's top chef, whose wary eyes belong to a man older than 36, and whose life has been blessed and cursed with incident. He was traveling with his two young sons, and they had just visited with the parents of his girlfriend, food journalist Heather Sperling.   14. Bar Toma: Italian fare inspires dreams of summertime dining

    <a class=&quot;runtimeTopic" href="#">Tony Mantuano</a> is on a roll. A local politician who flies on Air Force One these days calls him "my favorite chef." He's in the running &mdash; again &mdash; for the James Beard Foundation's Outstanding Chef award. His executive chef at Spiaggia, Sarah Grueneberg, came thisclose to winning Top Chef a week ago. His star power is such that last year Levy Restaurants happily blew up their venerable Bistro 110 (which probably needed overhauling) to let Mantuano create Bar Toma (as in TOny MAntuano), a casual-yet-urbane food and wine bar that seems to be a physical incarnation of "Wine Bar Food," the appetizer and wine book Mantuano wrote with his wife, Cathy.

  16. Dishing about food writing

    Food lends itself to good writing because, as M.F.K. Fisher so famously wrote long ago, writing about food often means writing about &ldquo;other, deeper needs for love and happiness.&rdquo; In defense of her craft and her subject, she declared: &ldquo;There is a communion of more than our bodies when bread is broken and wine is drunk.&rdquo; What was true in 1943's &ldquo;The Gastronomical Me&rdquo; is certainly true in 2012. If anything, the appetites seem sharper in this schizophrenic age where computerized whiz-bangeries distract us from a gray, downsized reality. Looking to feed a literal and figurative hunger are scores of food writers, chefs, food bloggers and even would-be food TV stars.
